Tartelettes aux fraises à la crème d’açaï

Strawberry tartlets with acai cream

For two tartlets (2 people).

STEP 1: INGREDIENTS

For the dough:

  • – 3 tbsp buckwheat flour

  • – 3 tbsp almond powder

  • – 1 tbsp. tahini

  • – 1 tbsp coconut sugar

  • – 1 tbsp grated coconut

  • – 3 tbsp. of vegetable milk (oat, rice, etc.)

  • – 1 tbsp. filtered water

For the acai cream:

  • – 1 tbsp cashew cream (or homemade: 2 handfuls of cashew nuts soaked for 6 hours then drain and blend)

  • – 1/2 to 1 banana

  • – 2 tsp of acai powder

STEP 2: RECIPE

Start by heating your oven to 180°C.

Prepare the dough for the tart bases, mix the dry ingredients (flour, almond powder, coconut, add the tahini, water, vegetable milk and mix until you obtain a smooth dough.

Form a ball with the dough, then 2 and place on your baking sheet lined with parchment paper or on your baking mat (silicone baking mats) two cookie cutters (you can coat the internal edges with coconut oil).

Mold your tart bases into the cookie cutters and leave to brown in the oven for around twenty minutes.

For the cream, mix your drained cashew nuts or cashew cream (with almond or hazelnut puree it also works) with the sweetener of your choice (coconut syrup, agave, dates or even yacon ) with half banana and açai (sometimes just the sugar in the banana is enough for some people).

Finally, place the cream in the tart bases and place your cut strawberries on top, sprinkle with raw cocoa nuggets , acai powder or of super topping .
