Salade tiède de chou-fleur violet et vinaigrette à la lucuma
Découvrez une recette créative, 100% vegan et sans gluten, mettant en valeur le chou-fleur violet et un super aliment : Salade tiède de chou-fleur violet et vinaigrette à la lucuma. Ingrédients (pour 2 personnes) Pour la salade : 1 petit chou-fleur violet 1 poignée de roquette ou de jeunes pousses 50 g d’amandes hachées Pour la vinaigrette à la lucuma : 1 c. à soupe de poudre de lucuma 3 c. à soupe d’huile d’olive extra vierge 2 c. à soupe de jus de citron 1 c. à soupe de sirop d’agave 1 c. à soupe d’eau tiède (ajuster selon la consistance désirée) 1 pincée de sel Poivre noir moulu Instructions Préparer le chou-fleur violet : Détachez les fleurettes et rincez-les soigneusement. Faites-les cuire à la vapeur pendant 5 à 7 minutes, jusqu'à ce qu'elles soient tendres mais encore légèrement croquantes. Transférez-les dans un saladier et laissez tiédir. Préparer la vinaigrette à la lucuma : Dans un bol, mélangez la poudre de lucuma, l’huile d’olive, le jus de citron, le sirop d’érable, et l’eau tiède. Fouettez jusqu’à obtenir une consistance lisse et homogène. Ajustez l’eau si nécessaire pour une texture plus fluide. Assaisonnez avec le sel et le poivre. Assembler la salade : Disposez sur une assiette les jeunes pousses, puis les fleurettes de chou fleur. Parsemer d’amandes hachées. Versez la vinaigrette à la lucuma sur le mélange et mélangez délicatement pour bien enrober les ingrédients. Dégustez !

For 1 bowl: STEP 1: INGREDIENTS 1 + 1/2 ripe banana, cut into pieces, frozen 1 tbsp white almond butter 1/2 fresh mango 2 tbsp. of Lucuma powder 2 tbsp. vegetable milk 3 drops vanilla extract 2 to 3 tbsp. of super exotic topping Granola, seasonal fruits, vegan whipped cream... optional: 1 tbsp. raw cacao nibs & 1 tsp of hemp seeds STEP 2: RECIPE Mix the banana pieces with the milk, the mango pieces, the lucuma , almond butter & vanilla, pour the mixture into a bowl. Decorate by adding fresh fruits or oilseeds of your choice as a topping on the mixture and/or a little super exotic topping . Enjoy!

A blend of flavors and benefits Lucumatcha is a blend of matcha , Japanese green tea powder & Lucuma powder, a fruit from the Peruvian Amazon. " Indeed, in addition to providing vitamins & fiber, Lucuma softens the sometimes slightly too bitter taste of Matcha, making it even easier to drink! I recommend mixing it with rice or oat milk! " A historic cultural marriage Peru and Japan have been very close. The Peruvian government in 1899 offered Japanese farmers to cultivate land on the coast. Peru even had a president of Japanese origin. Nikkei culture is therefore very present in Peru, particularly in the cuisine, ceviche or "leche de tigre", dishes of marinated raw fish reminiscent of Japanese culinary art (sashimi). “ Lucumatcha therefore echoes the history of this beautiful cultural marriage ,” explains Marie, who has travelled to both countries. You can already come and taste this latte at the restaurant rue des vinaigriers in Paris.
